Black Bean Salad
Plant based, Dairy-free, Vegan
There are times when getting a variety of different vegetables and nutrients in your meal can be a struggle. This is one reason salads can be such a helpful and easy go to meal! Strive for a colorful salad, like colors of the rainbow! Remember, each color brings it's own set of nutrients to the table. So, eat the rainbow!
Ingredients:
Serves about 6
1 apple, diced
1 beetroot, diced
beetroot leaves rinsed well and sliced thin (optional)
1 celery
¼ cucumber, diced
1 carrot, thinly sliced
½ cup spinach
2 cups purple cabbage, sliced thin
½ red onion, sliced
1 can of black beans, drained and rinsed.
¼ cup unsalted sunflower seeds
Dressing:
2 tbsp fresh cilantro, chopped
¼ cup Olive oil
2 tbsp apple cider vinegar
2 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika flakes
1 lemon, juiced
1 tbsp dijon mustard
½ tsp thyme
½ tsp turmeric
Salt and pepper to taste
Directions: Add chopped fruits and veggies into the bowl along with the beans, herbs, oil, and vinegar. (Or use a dressing of your choice!)
2. Mix well and top with sunflower seeds.
